Vegan Super Mario Cake!
So I’m really new to this whole cake decorating thing, but man it’s fun. I decided I wanted to try my hand at a Mario cake, but I wasn’t sure how well I would do. The solution? Mini Mario cake. That way I could get some practice, but not waste a bunch of supplies. I really like my little cake, but I must admit that it looks a little on the wonky side. Mario looks more like a long lost brother of Mario from the inbred side of the family. For a first try it’s pretty cute though. In my humble opinion anyway. I used pre colored fondant on some things I noticed that it cracked way more than the fondant I color myself. So in the future I will be sure to just color my own, even though it takes foreverrrrrrrrrr when you want a really bright or dark color. I use Wilton premade fondant, and it is vegan. Verified by Wilton. I used my chocolate cupcake recipe for the cake. I also made some cherry vanilla cupcakes the other day, and that recipe is PERFECT now. I would have posted them but….I ate them:-) Oops. That will be my next post and should come in the next few days. Oh yeah, all my recipes from this point will feature rice milk instead of soy. My body started getting angry at all the soy I was eating and made my thyroid go nuts. So I have to keep the soy to a minimum. That is too bad because soy is a good source of protein. Oh well…anyway, I’m sure soy milk will always sub well for the rice milk in the recipes I’ll be posting if soy is your preference. So now on to pictures! Mario is awesome.

Christmas Cake
Sorry for lack of post. I have been busy busy busy. I made our chocolate vegan xmas cake and it was totally cute! My first ever decorated cake. Yay! The recipe needs some tweaking so I won’t post that until i make it just right. I will be making cupcakes for a New Years Eve party and I will try the recipe again then. It was good, just not perfect yet. So on to the pictures, and Happy Holidays everyone!
